Dr. Alberta O. Akrong – Head of Programme, Faculty of Hospitality and Culinary Service

Dr. Alberta O. Akrong is a multidisciplinary scholar and organizational development specialist with over two decades of experience in higher education, socio-economic development, and research.

She holds a PhD in the Sociology of Education from the University of Toronto, with a cross-doctoral specialization in Comparative International Education and Development. She also earned a Master’s degree in Sociology of Education and Equity Studies from the same institution, and an Honours degree in Sociology and English from the University of Ghana.

Dr. Akrong’s work bridges academic research with real-world development initiatives. She has served as Project Lead on a Canadian-funded research initiative examining Girls’ Clubs as learning sites in Ghana and has held research fellowships at the Centre for Critical Development Studies at the University of Toronto and the Human Security Research Centre.

Her research spans diverse areas including women’s economic empowerment, educational policy, workplace learning, and trade in pre- and post-colonial Africa. More recently, her work has expanded into hospitality sector issues such as food sustainability, culinary ecosystems, food hygiene, and risk management within the service industry.

Passionate about student development, Dr. Akrong’s teaching philosophy is grounded in adult learning principles and inclusive pedagogy. She is committed to creating learning environments that empower students, foster innovation, and prepare future leaders for meaningful careers in hospitality and service industries.
